Since summer is in full swing, I thought I would take a departure from my usual hair related topics and bring you some recipes that are a staple in my summer repertoire.
This season brings a more relaxed schedule compared to the jam packed day to day the school year brings for my 3 kiddos. Summertime in my house means sleeping in, swimming for hours, BBQ’s with yummy food, sleep overs, popsicles and the sound of the ice cream truck that my kids can hear miles away. Summertime also means spending lots of time with family and loved ones. Whether we are hanging at our pool our meeting up at the beach, good food and yummy drinks are always a must! Going to a summer BBQ and need an appetizer? Or a yummy beverage? I’ve got you covered. Here are a few tried and true (and really easy) recipes that are always a huge hit.
Baguette, sliced 1” thick
1 pint of strawberries, diced
small handful of basil, cut into thin chiffonade
Balsamic reduction (trader joe’s makes a great one!)
about 6 oz of goat cheese
3 TBL tasting olive oil
Brush sliced baguette with olive oil and place under broiler for 2-3 mins or until golden brown
once cooled to touch, spread goat cheese on each piece
next add the diced strawberries
drizzle with balsamic glaze and sprinkle basil on top.
Spicy Pineapple Margarita
Start by infusing your favorite 100% agave blanco tequila with 2 thinly sliced jalapeños (no seeds) let this sit for at least 4 hours
Pour 1.5 oz over ice
2-3 lime wedges squeezed
3 oz pineapple juice
*you can add seltzer to lighten this up a bit
Stir and sip! So YUMMY!
